Though it sits on the top floor of Geneva’s oldest and most prestigious hotel, the Four Seasons Hotel des Bergues, Izumi is nevertheless a contemporary, cutting-edge affair, serving Nikkei (Japanese-Peruvian fusion) cuisine in a minimalist, intimate space. Ingredients are high quality and flavours intriguing: spicy mustard miso sauce with salmon tataki, truffle oil with spinach, matcha ice cream with a chocolate dessert. Service is impeccable, as you’d expect from a five-star hotel, and the price tag is also predictably high. But this is a memorable meal – made even more so if you dine on the roof terrace on a summer’s day, with Geneva and the lake spread out below you.
